Gerardo's spaghetti alla carbonara

About this recipe: Carbonara is everyone's favourite Italian dish, very simple to prepare with just a few ingredients.


Serves: 4 

  • 6 eggs
  • 25g grated Pecorino Romano cheese
  • 25g grated Parmesan cheese
  • black pepper to taste
  • 4 tablespoons extra virgin olive oil, divided
  • 200g cubed pancetta
  • 450g spaghetti
  • 1 teaspoon salt

  1. Break the eggs into a bowl and whisk well. Add grated Pecorino and Parmesan cheeses, and black pepper.
  2. Heat 2 tablespoons of olive oil and add the pancetta; cook over a medium heat, stirring occasionally, till the pancetta is crisp. When the pancetta is ready, remove from heat and add it to the bowl of eggs.
  3. Boil 4 litres of water with 1 teaspoon of salt. When water boils, add pasta.
  4. When pasta is almost ready (usually 1 to 2 minutes less than what is written on the box, but always taste it to verify), drain and then put it back into the pan.
  5. Add the egg mixture, stir well and add a couple of spoons of olive oil. Remove from the heat and serve.

Great recipe, cooked for a few friends and the Mrs. tonight, every plate was empty. Added 2 cloves of crushed garlic with the pancetta and garnished with a little parsley. Super simple to make and delicious. - 23 Jun 2014
