Yummy courgette fritters made the Turkish way. Courgette is combined with potato, mint, dill, parsley and a touch of paprika, then fried till golden. Serve with yoghurt sauce. You can also add some crumbled feta cheese to the mix.

250g grated courgette
250g grated potato
60g plain flour
8 leaves fresh mint, chopped
3 sprigs fresh dill, finely chopped
2 tablespoons finely chopped fresh parsley
1 pinch paprika
salt and pepper to taste
vegetable oil for frying

Squeeze courgettes and potatoes with your hands, to remove excess moisture. Combine them in a large bowl and mix with eggs, flour, herbs and paprika. Add salt and pepper to taste.
Pour enough oil into a large frying pan to cover the bottom. Heat over medium and fry a heaped tablespoon of the mixture per fritter on each side until golden brown.
