Spaghetti with cherry tomatoes and feta

About this recipe: This is a great recipe if you need to make dinner in a rush. Simple ingredients, simple method, simply wonderful!


Serves: 2 

  • 350g spaghetti
  • 1 punnet ripe cherry tomatoes
  • 150g feta cheese
  • 2 tablespoons fresh oregano, chopped
  • extra virgin olive oil, to taste
  • salt and pepper, to taste

  1. In a large saucepan of boiling salted water cook spaghetti until al dente. Drain and keep warm.
  2. Cut tomatoes in half and place them on a baking tray. Pop under the grill for a few minutes until they start to bubble and get wrinkly. Remove from the heat and set aside.
  3. Crumble feta and combine with oregano and tomatoes in a large bowl. Add olive oil, salt and pepper and mix with spaghetti. Serve right away.
