Gerardo's spaghetti all'amatriciana

About this recipe: Nothing like a spicy and tasty spaghetti dish to comfort you after a long day or to delight friends. Simple, quick and really delicious.


Serves: 4 

  • 450g spaghetti or bucatini
  • 3 to 4 tablespoons extra virgin olive oil, divided
  • 1 onion, finely chopped
  • 200g pancetta cubes
  • 500g passata
  • 1 or 2 tablespoons water
  • 1/2 teaspoon sugar
  • dried red chilli flakes to taste
  • 2 tablespoons grated Parmesan cheese
  • salt and pepper to taste

  1. Cook the pasta following the directions on the packet; drain and set aside.
  2. Heat 2 tablespoons of oil in a frying pan over medium heat with onion and fry until golden brown. Add pancetta cubes and cook until crispy, about 2 or 3 minutes, stirring every so often.
  3. Add the passata with water and sugar and cook until sauce has thickened.
  4. Toss the sauce with the hot cooked spaghetti and one or two tablespoons of olive oil, Parmesan cheese and red chilli flakes. Season to taste. Serve.
