About this recipe: I created this salad because I love kiwi fruit. It is a unique salad, perfect for those hot evenings in the summer.


Serves: 4 

  • 1 large carrot, sliced into rounds
  • 2 tablespoons olive oil, divided
  • 1 large lettuce, torn into pieces
  • 10 cherry tomatoes, halved
  • 2 kiwi fruit, peeled and sliced
  • 1 teaspoon balsamic vinegar
  • 1 pinch of salt

  1. Quickly sauté the carrot slices in 1 tablespoon of olive oil in a hot saucepan until soft.
  2. Place the lettuce in a salad bowl. Top with the halved cherry tomatoes, then the carrots and kiwi slices. Drizzle with the remaining olive oil and vinegar, and season with a pinch of salt.
