Tricolori salad

I created this salad because I love kiwi fruit. It is a unique salad, perfect for those hot evenings in the summer.

Ingredients
Serves: 4
- 1 large carrot, sliced into rounds
- 2 tablespoons olive oil, divided
- 1 large lettuce, torn into pieces
- 10 cherry tomatoes, halved
- 2 kiwi fruit, peeled and sliced
- 1 teaspoon balsamic vinegar
- 1 pinch of salt

- Quickly sauté the carrot slices in 1 tablespoon of olive oil in a hot saucepan until soft.
- Place the lettuce in a salad bowl. Top with the halved cherry tomatoes, then the carrots and kiwi slices. Drizzle with the remaining olive oil and vinegar, and season with a pinch of salt.
