About this recipe: This unique and easy Italian recipe takes fresh mackerel and bakes it with sage and butter, then finishes baking with lemon-infused beaten egg.

Serves: 4 

  • 4 fresh mackerel
  • salt and pepper to taste
  • 70g butter
  • 8 sage leaves
  • 2 eggs
  • juice of 1 lemon
  • 60g flaked almonds, toasted

Prep:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Preheat oven to 170 C / Gas 3.
  2. Wash and dry the mackerel. Salt them and place them in a ovenproof baking dish with the butter and 8 sage leaves.
  3. Bake the mackerel in the oven for 20 minutes.
  4. Meanwhile, beat the eggs with salt, pepper and the lemon juice.
  5. Pour the mixture of eggs on the mackerel and bake it for another 8 minutes.
  6. Serve the mackerel hot with the toasted almonds sprinkled over top.
