Green bean and sun-dried tomato salad

    A quick Italian salad recipe that can be served as a starter or as a side dish to accompany barbecued meat.

    Serves: 6 

    • 1/2 red onion, finely chopped
    • olive oil
    • 1 teaspoon brown sugar
    • 50g butter
    • 400g green beans
    • 200g sun-dried tomatoes, chopped
    • grated zest of 1 lemon
    • salt and pepper to taste

    1. Heat a little olive oil in a frying pan and add the onion. Add the brown sugar and the butter and cook it for 3 minutes.
    2. Add green beans, sun-dried tomatoes and lemon zest to the onion mixture and stir to coat. Cook for 5 minutes, stirring occasionally.
    3. Add salt and pepper to taste and then serve.


    Make this salad vegan and dairy-free by skipping the butter and using extra olive oil instead.

    Followed the recipe exactly, had it fresh out of the pan as a side dish with breaded pork chops, we all liked it. We are drowning in green beans from the allotment at the moment, so this was a welcome change. Not sure if this is to be eaten hot or cold?  -  10 Aug 2014


    Very easy recipe. never used sun dried tomatoes with Green Beens so this really made a nice change. Follwed the recipe exactly. next time I think I will add a little chopped bacon. Thank you for sharing  -  09 Sep 2012
