Pear and Pecorino salad

    This delicious salad is the perfect accompaniment to a colourful autumn soup made from courgette or squash. Use red Anjou pear if you can.

    Serves: 4 

    • 200g mixed lettuce (arugula, romaine, etc.)
    • 1 ripe pear - unpeeled, cored, sliced
    • 55g pecans, roughly chopped
    • 55g Pecorino Romano cheese, shaved
    • Vinaigrette
    • 2 tablespoons lemon juice
    • 1 tablespoon white wine vinegar
    • 1/2 teaspoon mustard
    • 1 teaspoon honey
    • 6 tablespoons olive oil

    1. To make the vinaigrette, combine the lemon juice, vinegar, mustard and honey. Whisk till well combined. While whisking constantly, slowly pour in a steady stream of the olive oil.
    2. Toss the vinaigrette with the remaining ingredients and serve.

    Cook's note

    The red Anjou pear gives a nice colour to the salad. Instead of using pecans, you can use hazelnuts or pistachios.
