Quick chicken with white wine and tarragon sauce

About this recipe: A dish like this sounds like it will take forever to cook. It almost sounds like a casserole. In reality you can make this lovely chicken recipe in under 30 minutes from pan to plate - perfect for a fresh and healthy dinner on demand. Herby chicken with cooling cream and vegetables is comforting yet light and will go down a storm at any family or dinner party. It's a Canadian recipe, and so tasty.

Serves: 4 

  • 1 tablespoon garlic oil
  • 2 spring onions, chopped
  • 4 large chicken breast fillets
  • 3 teaspoon dried tarrogan
  • salt and white pepper to taste
  • 125ml dry white wine
  • 125ml cream
  • 1 sprig of fresh tarragon

  1. Heat up a large pan on the hob with the garlic oil to get a wonderful aroma going. Add the spring onions and start to fry them off.
  2. Add the chicken breasts into a roaring sizzle and allow them to brown on both sides for around 5 minutes until golden.
  3. Add the dried tarragon and season well with white pepper and salt.
  4. Pour in the white wine and cover with a lid for 10 minutes until the chicken is cooked through. Cut it in the thickest part to check that it's done.
  5. Remove the chicken and place onto warm plates. Add the cream into the cooking liquor, add the fresh tarragon and season once again. Stir until it slightly thickens and then pour over the chicken.


Easy, and done in under 30 minutes. Serve with green beans and rice as perfect accompaniments.
