About this recipe:These moist and flavourful muffins are an ideal treat for picnics, summer barbecues and cake sales. The recipe is easy to double or triple should you need more than a dozen muffins.
Makes: 12 banana chocolate muffins
200g plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1 pinch salt
100g plain yoghurt
100ml vegetable oil
100g brown sugar
1 packet vanilla sugar
1 egg, lightly beaten
1 1/2 over-ripe bananas, mashed with a fork
100g chocolate chips

Preheat oven to 175C / Gas 3/4. Grease a 12 hole muffin tin, or line with paper cases.
Mix flour, baking powder, bicarb and salt in a large bowl.
In a separate bowl, mix yoghurt, oil, brown sugar and vanilla sugar. Stir in the egg and mashed bananas and add to the dry ingredients taking care not to over-mix. Finally, stir in chocolate chips and fill prepared muffin tins 2/3 full with cake mixture.
Bake 20 to 22 minutes until golden brown and a skewer inserted in the centre of a muffin comes out clean. Remove from the oven and enjoy warm, or place on a cooling rack and cool before serving.
Vanilla sugar is generally available in supermarkets nowadays, however, in a pinch substitute 1 teaspoon of vanilla extract to every 2 teaspoons vanilla sugar.
