Banana chocolate muffins

    These moist and flavourful muffins are an ideal treat for picnics, summer barbecues and cake sales. The recipe is easy to double or triple should you need more than a dozen muffins.

    Makes: 12 banana chocolate muffins

    • 200g plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1 pinch salt
    • 100g plain yoghurt
    • 100ml vegetable oil
    • 100g brown sugar
    • 1 packet vanilla sugar
    • 1 egg, lightly beaten
    • 1 1/2 over-ripe bananas, mashed with a fork
    • 100g chocolate chips

    1. Preheat oven to 175C / Gas 3/4. Grease a 12 hole muffin tin, or line with paper cases.
    2. Mix flour, baking powder, bicarb and salt in a large bowl.
    3. In a separate bowl, mix yoghurt, oil, brown sugar and vanilla sugar. Stir in the egg and mashed bananas and add to the dry ingredients taking care not to over-mix. Finally, stir in chocolate chips and fill prepared muffin tins 2/3 full with cake mixture.
    4. Bake 20 to 22 minutes until golden brown and a skewer inserted in the centre of a muffin comes out clean. Remove from the oven and enjoy warm, or place on a cooling rack and cool before serving.

    Vanilla sugar

    Vanilla sugar is generally available in supermarkets nowadays, however, in a pinch substitute 1 teaspoon of vanilla extract to every 2 teaspoons vanilla sugar.
