This is my family recipe for spaghetti and meatballs with a fresh and tasty tomato sauce which I make from scratch. I could eat it every week!

1 tablespoon olive oil
1 onion, minced
1 garlic clove, minced
1 (400g) tin diced tomatoes
100ml vegetable stock
salt and pepper, to taste
1 pinch caster sugar
250g lean beef mince
4 tablespoons grated Parmesan cheese

Bring a large saucepan of salted water to the boil. Add spaghetti and cook according to instructions on the package until al dente. Drain.
Meanwhile heat olive oil in frying pan and cook and stir the onion and garlic until soft. Add tomatoes and vegetable stock and season with salt, pepper and sugar to taste.
In a mixing bowl combine beef, egg and Parmesan cheese. Add salt and pepper and mix well. With your hands form into meatballs and place them into the hot tomato sauce. Simmer for about 20 minutes over low heat, until no longer pink in the centre.
Serve spaghetti topped with meatballs and tomato sauce.
