Foolproof mayonnaise
Have you ever tried to make mayonnaise? So many rules to follow! Well, luckily, the electric hand blender was invented and in 30 seconds you can have wonderful mayonnaise!
Ingredients

- 1 egg
- 1 teaspoon vinegar
- 1 tablespoon lemon juice
- 250ml sunflower oil
- 1/2 teaspoon salt
- 1 pinch of sugar

- Put all the ingredients in the order listed in a deep bowl. Place the electric hand blender on the bottom of the bowl, right above the egg. Start blending, keeping the blender on the bottom for the first 5 seconds. Bring the blender slowly upwards, mixing all the ingredients, about 10 to 20 seconds in total. The mayonnaise is ready!
- Taste to see if it needs more salt and lemon juice. Place it in the fridge until you are ready to serve. You can keep it in the fridge for 3 to 4 days in a container that is tightly closed.
Tip:
Extra virgin olive oil is not a good one to use for this recipe because it has a strong flavour. Use an oil like sunflower or rapeseed oil.
