Quick Calabrese-style cod fillets

    A quick and healthy Italian fish dinner that is ready in just 20 minutes. Perfect for busy families during the workweek.

    Serves: 4 

    • 2 to 3 tablespoons olive oil
    • 1 small onion, sliced
    • 4 cod fillets
    • 1 pinch of crushed red chilli flakes
    • 180g cherry tomatoes, cut in half
    • 2 to 3 sprigs of fresh thyme, roughly chopped
    • 2 to 3 tablespoons freshly squeezed orange juice

    1. Heat the olive oil in a medium saucepan, and cook the onion until it is translucent and then set it to one side of the pan. Add the cod fillets to the same pan and cook until browned on one side.
    2. Add the cherry tomatoes, thyme and the orange juice and cover the pan. Lower the heat and cook 4 to 5 minutes until the fish is cooked through and flakes easily with a fork.
    3. Spoon the sauce from the pan over the fish when serving.


    The cherry tomatoes will be just warmed through, not cooked.
    If you are using dried thyme, use just a pinch. Or you can use 2-3 sprigs of parsley instead.
    Serve the cod on a bed of pasta or rocket.
