You can fill these savoury cream puffs with a soft cheese of your choice. Use blue cheese or goat cheese for a stronger aroma, or cream cheese for a milder version.

125g unsalted butter
125g plain flour
1/2 teaspoon baking powder
cream cheese cheese
salt and pepper to taste
1 pinch cayenne pepper
fresh mixed herbs, chopped

Preheat oven to 215 C / Gas 7. Grease and flour a baking tin.
In a saucepan combine water and butter. Bring to the boil and add flour gradually, stirring constantly, until the mixture detaches from the pan. Take off the heat and stir in eggs and baking powder.
Fill mixture into a piping bag with a large round tip and squirt golfball size portions onto the baking tin.
Bake until golden brown, about 20 minutes. Take out of the oven and place on a wire rack to cool slightly. Cut the puffs open to let out the steam and let cool completely.
In a bowl stir cheese, quark and cream till smooth. Use as much of each ingredient as you need to obtain a consistency like whipped cream. Add salt, pepper and fresh herbs to taste. Clean the piping bag and fill it with the cheese mixture. Fill puff pastry with the cheese mixture and serve right away. If the puffs sit too long they will get soggy.
