Quick and easy cheesy orzo

    Total comfort food! And great as a side dish to chicken or pork. For the cheese, you can use grated Parmesan or other mature hard cheese, or even a cream cheese.

    Serves: 2 

    • 1 tablespoon oil
    • 1 onion, chopped
    • 1 clove garlic, chopped
    • 190ml hot water
    • 1 chicken or vegetable stock cube
    • 100g orzo pasta
    • 40g grated cheese
    • salt and freshly ground black pepper to taste

    1. Add oil, onion and garlic to a saucepan and saute for 2 or 3 minutes. Add stock cube and water, and bring to the boil. Stir in orzo and return to the boil, then reduce to a simmer.
    2. Cook 15 minutes, stirring occasionally, or until liquid is absorbed and the orzo is tender.
    3. Stir in cheese, salt and pepper. Once cheese is melted and stirred through, serve straightaway.
