Deliciously moist banana and honey loaf

    This banana loaf cake is made with hint of honey and is deliciously moist and simple to make.

    Makes: 1 banana loaf cake

    • 55g butter
    • 200g caster sugar
    • 3 ripe bananas, mashed
    • 1 egg
    • 2 tablespoons honey
    • 250g self raising flour
    • 1 teaspoon baking powder
    • 1 tablespoon milk

    1. Cream together butter and sugar. Mix in the mashed bananas, egg and honey.
    2. Sift into the mix the flour and baking powder and fold in.
    3. Lastly add the milk and mix thoroughly. Put the mixture into a greased or lined loaf tin.
    4. Bake in the centre of a pre-heated oven at 180 C / Gas 4 for 30 minutes, then reduce the temp to 160 C / Gas 3 and bake for a further 30 minutes.

    The most delicious banana loaf I have ever made! Really easy and satisfyingly chewy in a sweet kind of way with the honey. All gone within the day, even loved by my youngest who doesn't like cake! Will be making again, and again and ..... Well you get the idea.  -  14 May 2013


    Completely collapsed. I am interested in how the previous reviewer managed to reduce the sugar by 50 g when there is only 55 in the recipe. The proportions of sugar/butter/flour/egg sounded odd when I made this. It initially rose and then sunk. Not a good result for me.  -  12 Jun 2014
