About this recipe:This extremely easy recipe is a great alternative to regular wedges. Sweet potatoes are healthier than regular potatoes - they are a great source of vitamins and minerals and are diabetes-friendly. Not only is this a lighter version of potato wedges - it's just as delicious.
2 to 3 sweet potatoes, cut into chunky wedges skin-on
2 to 3 tablespoons olive oil
salt and pepper to taste
1 dash of cayenne pepper (optional)

In either a large bowl or directly in your baking dish, toss around the potato wedges with the oil, salt and pepper, and cayenne pepper if using. Make sure the wedges are evenly coated. Use your hands to rub each wedge.
Bake the potatoes in a 200 C / Gas 6 oven for about 45 minutes, flipping the potatoes half-way through. You can use a skewer to poke the wedges to make sure they are soft all the way through. Cooking time may vary according to the size of the wedges.
A great sauce to go with this recipe is a tzatziki.
