Coconut apple cake

    Apple and coconut go very well together. This cake is very easy and quick to make and it freezes well.

    Ingredients
    Serves: 12 

    • For the pastry
    • 100g unsalted butter, at room temperature
    • 100g caster sugar
    • 2 eggs
    • 1 teaspoon baking powder
    • For the filling
    • 5-6 apples
    • 3 tablespoons lemon juice
    • 100g unsalted butter, at room temperature
    • 100g caster sugar
    • 3 eggs
    • 75g dessicated coconut

    Method

    1. Preheat oven to 175 C / Gas 3-4.
    2. Combine all the ingredients for the pastry in a large bowl, mix well and transfer to a greased springform tin.
    3. Peel apples, remove the core and finely slice. Layer on top of the pastry and sprinkle with lemon juice.
    4. In another bowl mix together butter, sugar, eggs and coconut. Spread over the apples.
    5. Bake until a wooden skewer inserted in the middle of the cake, comes out clean, about 1 hour.
