Gluten and dairy free nut cake

    I make this cake for my friend who is intolerant to gluten. It is made with ground up nuts instead of flour and tastes just wonderful rich.

    Serves: 12 

    • 6 eggs
    • 250g icing sugar
    • 250g nuts, finely ground
    • 2 tablespoons rum
    • 2 tablespoons glutenfree breadcrumbs
    • a dash French bitter almond extract
    • ready made chocolate icing

    1. Preheat oven to 175 C / Gas 3-4.
    2. In a bowl beat 2 of the eggs with icing sugar until frothy.
    3. Separate the remaining eggs and add egg yolks together with nuts, rum, breadcrumbs and bitter almond oil to the sugar-egg mixture. Beat egg whites in another bowl until stiff and fold into the mixture.
    4. Line a loaf tin with greaseproof paper and pour in the mixture.
    5. Bake in the preheated oven ntil a wooden skewer inserted in the center comes out clean, about 50 minutes.
    6. Let cake cool down, take out of the tin and cover with chocolate icing.
