Summer orzo salad

    Lovely orzo pasta salad, with colourful carrot and mixed peppers - a treat for the eyes and the tongue.

    Serves: 2 

    • 100g orzo pasta
    • 1 tablespoon olive oil
    • 2 tablespoons lemon juice
    • 1 garlic clove, minced
    • salt and ground black pepper to taste
    • 1 small carrot, grated
    • 100g mixed peppers, chopped
    • 1/2 small red onion, chopped

    1. Cook orzo in plenty of salted boiling water until tender, 10 to 12 minutes. Rinse in cold water to cool, and drain well.
    2. Whisk oil, lemon juice, and garlic until blended. Season to taste.
    3. Mix the drained orzo with the dressing, and the chopped veg.
