About this recipe: This is a really delicious, easy and light recipe with just 5 ingredients. It's so easy to make and it tastes fresh and light. It's a perfect accompaniment to grilled meat or fish.

Serves: 2 

  • 100g orzo
  • 1 chicken stock cube
  • 1 tablespoon butter
  • 1 large or 2 small, chopped
  • 2 tablespoons tinned or frozen sweetcorn
  • salt and pepper to taste

  1. Bring a medium pot of boiling water to the boil over medium heat. Season the water with salt, then add the orzo and stock cube, and cook until just soft. Drain, reserving the cooking liquid.
  2. In a pan, gently melt the butter and fry the leeks until translucent. Keep heat low, as you don't want them to brown. Add the sweetcorn, and 1 to 2 tablespoons of the reserved orzo cooking liquid. Bring to a simmer and cook until it thickens.
  3. Add the orzo and toss to combine. Season with salt and pepper, to taste.
