The muffins are like mini apple cakes. It is a great afternoon treat for my kids and has just the right size.

250g plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
125g butter, at room temperature
200g caster sugar
2 teaspoons vanilla sugar
1 teaspoon vanilla extract
200g (1 to 2) apples, peeled, cored and finely diced

Preheat oven to 190 C / Gas 5. Grease a muffin tin or line with paper cups.
In a bowl combine flour, baking powder, bicarb of soda and salt. In a separate bowl mix sugar and vanilla sugar and sprinkle 1 tablespoon over the apple pieces and mix. Let sit for a little while.
In another bowl cream butter. Add sugar mixture and mix well. Stir in one egg at a time, mixing well after each addition. Add the dry ingredients and mix until just combined. Fold in apple pieces.
Fill muffin tin forms to 2/3 with mixture and bake in the preheated oven until a tooth pick inserted in the center comes out clean, 20 to 25 minutes. Let muffins cool for 5 minutes in the tin, take out and let cool completely on a cooling rack.
