About this recipe:I adjusted the recipe I use for marble cake to make these lovely chocolate and vanilla marbled muffins. You can make about 30 muffins with this recipe so you can definitely get away with hiding some in the freezer! Add some chocolate chips if you like.

375g unsalted butter
375g caster sugar
1 teaspoon vanilla extract, or to taste
1 tablespoon baking powder
60g cocoa powder

Preheat the oven to 180 C / Gas 4. Lightly grease 3 muffin tins, or line with paper cases.
In a large bowl, beat butter with an electric beater. Gradually add sugar, vanilla and eggs, stirring well after each addition. After all the eggs are added, mix for another 5 minutes.
In a separate bowl, combine flour and baking powder. Gradually add the flour to the butter mixture, alternating with a little milk, until well mixed.
Transfer about 1/3 of the vanilla cake batter into a separate bowl; mix in cocoa powder until you achieve a chocolate cake batter.
Fill the paper cases half full with vanilla cake batter and top with the chocolate cake batter. Stick a skewer into each muffin and swirl to create the marbled pattern.
Bake muffins for about 30 minutes, until a skewer inserted in the centre comes out clean.
Let the muffin cool down in the tin for a few minutes, before taking them out and letting them cool completely on a wire cooling rack.
