Venus black rice with prawns and courgettes

    A delicate alternative to white rice, this recipe will satisfy sophisticated palates with the unbeatable combination of prawns and courgettes!

    Serves: 4 

    • 300g black rice
    • 3 tablespoons extra virgin olive oil, plus more for serving
    • 1 shallot, minced
    • 1-2 courgettes, cut into 1cm cubes
    • 150g peeled prawns
    • 200ml dry white wine
    • 1 small bunch chives, chopped

    1. Bring a large pot of salted water to the boil. Add the rice, and cook until the rice is tender, about 18 minutes.
    2. Heat oil in a frying pan over medium heat, and cook and stir the shallot until translucent, about 3 minutes. Stir in the courgettes.
    3. Stir in the prawns and white wine; simmer and cook, stirring occasionally, until the wine evaporates.
    4. Drain the rice and stir in the chives. Toss the rice with the prawns and courgettes, and cook for a few minutes.
    5. Drizzle with a teaspoon of olive oil to serve.
