    About this recipe: A delicate alternative to white rice, this recipe will satisfy sophisticated palates with the unbeatable combination of prawns and courgettes!

    Ingredients
    Serves: 4 

    • 300g black rice
    • 3 tablespoons extra virgin olive oil, plus more for serving
    • 1 shallot, minced
    • 1-2 courgettes, cut into 1cm cubes
    • 150g peeled prawns
    • 200ml dry white wine
    • 1 small bunch chives, chopped

    Method

    1. Bring a large pot of salted water to the boil. Add the rice, and cook until the rice is tender, about 18 minutes.
    2. Heat oil in a frying pan over medium heat, and cook and stir the shallot until translucent, about 3 minutes. Stir in the courgettes.
    3. Stir in the prawns and white wine, bring to the simmer, and cook, stirring occasionally, until the wine evaporates.
    4. Drain the rice and stir in the chives. Toss the rice with the prawns and courgettes, and cook for a few minutes.
    5. Drizzle with a teaspoon of olive oil to serve.
