Beef fillet with mushrooms and cream

    This can be served as a one dish meal or as the main course. If you prefer, you can use pork fillet or chicken breast.

    Serves: 8 

    • 1kg beef fillet
    • 100g butter
    • 250g button mushrooms
    • 250g gherkins
    • salt and pepper to taste
    • 200ml double cream
    • 1 lemon, juiced
    • chopped fresh parsley to garnish

    1. Brown the beef on all sides with 50g of the butter.
    2. Slice the mushrooms and gherkins. In a large saucepan, saute the mushrooms and pickles in the remaining 50g butter until the mushrooms are lightly browned, about 5 minutes. Season with salt and pepper. Add the beef, cream and lemon juice and cook over medium heat for 10 minutes with the lid on.
    3. Before serving, take the lid off the pot and turn up the heat for 2 minutes. Place everything on a serving dish and sprinkle with chopped parsley.

    We loved this recipe. Very easy to make and a very delightful meal. I used a rib eye steak as that is my favourite cut. Will surely make this again. Thanks for posting the recipe  -  12 Sep 2012
