About this recipe: When honeydew melons are in season, this is a unique combination of salty fish with the sweetness of the melon. If you cannot find perch, use sole.

Serves: 2 

  • 1 small honeydew melon
  • olive oil as needed
  • 2 sprigs of rosemary
  • dried breadcrumbs
  • salt and pepper to taste
  • 2 perch fillets

  1. Using an ice cream scoop, make honeydew melon balls. Marinate the balls in the olive oil and the rosemary.
  2. Season the breadcrumbs with salt and pepper. Cut the perch fillets into little pieces and dredge them in the breadcrumbs.
  3. In a saucepan, heat up some oil, add some salt and sauté the perch for 5 minutes. At the same time, in another pan, sauté the melon balls for a few minutes in a bit of oil
  4. Serve the perch and melon garnished with a sprig of rosemary.
