    Roasted winter vegetables make an easy and delicious side dish for roast beef or pork chops.

    Ingredients
    Serves: 4 

    • 4 large potatoes, peeled and cubed
    • 4 sweet potatoes, peeled and cubed
    • 4 beetroots, peeled and cubed
    • 2-3 red onions, sliced into wedges
    • 1 tablespoon olive oil
    • salt and pepper to taste

    Method

    1. Preheat oven to 220 C / Gas 7.
    2. In a large bowl, toss cubed vegetables and sliced onion with olive oil; toss to coat. Place in a single layer in a roasting tin; add one or two tablespoons of cold water.
    3. Roast for 45 minutes in preheated oven, turning occasionally, until soft and caramelised.
