Coconut traybake cake

    This cake is so easy to make, that I let my kids do most of the work. I just help them to eat it when it is all finished.

    Makes: 1 sheet cake

    • 2 eggs
    • 600g caster sugar
    • 600g flour
    • 500ml buttermilk
    • 4 teaspoons baking powder
    • 1/2 (250g) packet desiccated coconut
    • 200ml single cream

    1. Preheat oven to 175 C / Gas 3-4. Line a baking tray with greaseproof paper.
    2. In a bowl beat eggs with 2/3 of the sugar until foamy. Gradually add half of the flour and pour in buttermilk.
    3. Mix the remaining flour with baking powder and add them to the mixture. Pour mixture into the baking tin and even it out with a spoon.
    4. In another bowl mix together remaining sugar and coconut and sprinkle over the cake.
    5. Bake until a toothpick inserted in the centre comes out clean, 20 to 30 minutes. Pour cream over the cake while still warm and serve.
