Raspberry and peach bellini cocktail

    A very fresh and delicate twist on the bellini cocktail to welcome your friends. You can't go wrong with fruit and Champagne!

    Serves: 6 

    • 1 punnet red raspberries, pureed
    • 4 peaches, peeled and pureed
    • 1 bottle Champagne

    Prep:10min  ›  Cook:10min  ›  Extra time:20min freezing  ›  Ready in:40min 

    1. Place 6 Champagne flutes in the freezer.
    2. Combine the peach and raspberry purees.
    3. Divide the fruit puree between the flutes. Top with Champagne.
    4. Decorate flutes with slices of peaches, if desired. Serve.

    This was very good, however, the next time I make it I will strain the raspberry puree. Way too many seeds that really detracted from the drink. thanks for posting the recipe.  -  12 Sep 2012
