Esha's lemon fairy cakes

    This recipe is quick and easy, tastes delicious and can be served with a number of things! This should make about 18 to 25 fairy cakes (also depends on the size).

    Makes: 18 to 25 fairy cakes

    • 230g butter, softened
    • 230g caster sugar
    • 4 eggs
    • 230g self-raising flour
    • 1 lemon, juiced and zested
    • 75g milk chocolate, melted

    1. Pre-heat the oven to 190 C / Gas 5.
    2. First beat the butter and caster sugar until light and fluffy. Stir in all the eggs. Next sieve in the self raising flour. Stir in lemon juice and zest. Spoon evenly in to paper cases.
    3. Place cupcakes into oven to bake for 20 to 25 minutes. Once ready leave to cool for 10 to 15 minutes.
    4. Next drizzle melted chocolate over cupcakes. Leave to set for 15 minutes.
