Esha's lemon fairy cakes

    This is a quick and easy recipe for lemon-flavoured fairy cakes drizzled with chocolate.

    Ingredients
    Makes: 18 to 25 fairy cakes

    • 230g butter, softened
    • 230g caster sugar
    • 4 eggs
    • 230g self-raising flour
    • 1 lemon, juiced and zested
    • 75g milk chocolate, melted

    Method

    1. Preheat the oven to 190 C / Gas 5. Line a mini cupcake tin with paper cases.
    2. Beat the butter and caster sugar until light and fluffy. Stir in all the eggs. Sieve in the self-raising flour, then lemon juice and zest. Spoon evenly into paper cases.
    3. Place cupcakes into oven to bake until a tester comes out clean, about 20 to 25 minutes. Leave to cool for 10 to 15 minutes.
    4. Drizzle melted chocolate over the cupcakes and leave to set for 15 minutes.
