About this recipe: This is a very inviting Italian starter, superbly easy to make, and a real crowd-pleaser. Serve with crusty bread.


Serves: 4 

  • 1 punnet cherry tomatoes, halved
  • 1 clove garlic, finely chopped
  • 60g olives, pitted and chopped
  • 2 tablespoons extra virgin olive oil
  • 1 pinch salt
  • 250g buffalo mozzarella cheese, sliced
  • 1 sprig rosemary
  • 1 red chilli, chopped

Prep:10min  ›  Cook:5min  ›  Extra time:30min marinating  ›  Ready in:45min 

  1. In a bowl, combine the tomatoes, garlic, olives and oil. Add salt to taste and let sit for 30 minutes.
  2. Arrange the mozzarella slices on a large serving platter. Sprinkle with the rosemary and red chilli, then spoon over the tomato mixture. Serve!

This was just okay for us. Seemed bland but I might liven this up next time with some chili sauce or Srirachia. thanks for posting - 12 Sep 2012
