Homemade Parmesan chips


    My version of posh cheesy chips! Made with fresh Parmesan cheese and baked in the oven so that they are a bit healthier.

    Serves: 2 

    • 3 large potatoes
    • 2 to 3 tablespoons olive oil
    • 2 tablespoons butter, melted
    • garlic powder, to taste
    • salt, to taste
    • freshly grated Parmesan cheese, to tatse

    1. Preheat oven to 215 C / Gas 6/7 and lightly grease a baking tray.
    2. Rinse potatoes, peel and cut into small chips. Place into a bowl and mix with oil, melted butter, garlic powder and salt to taste. Arrange chips on the prepared baking tray.
    3. Bake for about 20 minutes in the preheated oven until lightly browned. Turn once after 10 minutes to promote an even browning. Remove from the oven.
    4. Set chips onto kitchen paper to soak up excess fat and place them into a bowl. Toss with Parmesan cheese and add more salt, if desired. Enjoy immediately.
