Cherry streusel pie

    A German cherry pie with with a moist quark filling and a delicious butter crumble topping.

    Serves: 12 

    • Pastry
    • 300g plain flour
    • 1 teaspoon baking powder
    • 100g soft unsalted butter
    • 150g caster sugar
    • 1 egg
    • Filling
    • 3 eggs
    • 150g caster sugar
    • 2 teaspoons vanilla sugar
    • 500g low fat quark
    • a dash lemon juice
    • 2 tablespoons semolina
    • 500g morello (sour) cherries, fresh or frozen, pitted

    1. Preheat oven to 200 C / Gas 6. Grease a 24cm springform pan.
    2. In a bowl combine all the ingredients for the pastry and knead until it forms a crumbly dough. Set to one side.
    3. For the filling beat eggs with caster sugar and vanilla sugar until pale and creamy. Add quark and lemon juice and gradually stir in semolina.
    4. Place 2/3 of the pastry mixture in springform pan and distribute it evenly to cover the entire bottom. Press down lightly. Top with cherries and evenly spread quark mixture over it. Crumble the remaining pastry mixture on top.
    5. Place cake on the lowest rack in the oven and bake for 1 hour.


    The original recipe calls for sour cherries but you can used dark sweet cherries instead.
