Chilled melon coconut soup

    This is a delicious slightly sweet soup for hot days. I am using light coconut milk for this recipe.

    Serves: 4 

    • 1 small ripe honeydew or cantaloupe melon
    • 1 (400ml) tin coconut milk light
    • 2 tablespoons honey
    • 2 limes, juiced
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground ginger

    1. Cut melon in half, remove seeds and peel. Cut into chunks.
    2. Place melon in blender with all other ingredients till smooth. Refrigerate till well chilled.
