About this recipe: Tuna tartare is a delicious starter and the orange juice gives this version a unique flavour. Great make ahead dish for a party.


Serves: 4 

  • 1 orange, zested and juiced
  • 1 teaspoon extra virgin olive oil
  • 1 bunch dill, parsley or fennel fronds
  • 500g fresh sliced tuna
  • salt and freshly ground black pepper to taste

  1. Mix the orange juice with the zest, then add a teaspoon of oil.
  2. Chop the herbs and save a few sprigs for decoration. Add the chopped herbs to the orange mixture.
  3. Dry tuna with kitchen paper and cut into cubes. Sprinkle with salt and pepper, then add to the orange mixture. Toss well and marinate in the fridge for 1 hour.
  4. Garnish with sprigs of fresh herbs before serving.
