About this recipe: A very refreshing and sweet apple salad with almonds, walnuts and pistachios. The dressing is light and lemony.


Serves: 6 

  • 6 medium apples
  • 100g walnuts, chopped
  • 100g flaked almonds
  • 50g candied cherries , chopped (optional)
  • 1 tablespoon pistachios, chopped
  • For the dressing
  • 60g caster sugar
  • 1 lemon, juiced
  • 1/2 lemon, zested
  • 2 shot glasses arak
  • 1 tablespoon honey
  • 1 pinch ground cinnamon
  • 1 tablespoon desiccated coconut

  1. Peel and core the apples then cut in thin slices and place into a bowl. Add walnuts, almonds, cherries and pistachios.
  2. For the dressing:

  3. Mix all ingredients for the dressing except the coconut in a separate bowl. Pour over apples, cover and marinate in the fridge for at least 1 hour. Before serving add coconut and mix well.


Arak is a popular distilled alcoholic drink largely produced in Asia. It may not be available locally, so try searching online or in speciality shops. If you are unable to find it, you could try substituting with grappa or aquavit however cannot guarantee the final result.
