Sauteed beetroot leaves

    You don't have to discard the leaves of the beetroot, they are actually pretty tasty and healthy to eat. This is a simple recipe for sauteed beetroot leaves with garlic.

    Serves: 2 

    • 200g beetroot leaves
    • 1 tablespoon olive oil
    • 1 garlic clove, minced
    • salt and pepper, to taste

    1. Rinse and drain leaves. Cut the stalks into 3cm long pieces and set aside. Place leaves on top of each other and cut into strips.
    2. Heat oil in a large skillet and cook garlic over low heat, until fragrant. Add stalks and cook and stir for 2 minutes. Then add the leaves and cook for a few minutes, stirring occasionally, until soft and wilted. Season with salt and pepper to taste and transfer to a serving dish. Serve hot.
