About this recipe: These crispy and colourful courgette flowers are a fabulously simple starter. Since the flowers are so delicate, use only fresh oil.


Serves: 4 

  • 300g courgette flowers
  • 200g plain flour
  • 300ml water
  • 1 teaspoon salt
  • 500ml vegetable oil

  1. Gently rinse the flowers, pinching the stamen out of the middle of each.
  2. In a bowl, mix the flour with the water and salt.
  3. Dredge the courgette flowers into the flour mix, very gently.
  4. Heat the oil in a frying pan, add the courgette flowers and fry them until crispy.
  5. Place on a plate lined with kitchen paper to soak up excess oil. Sprinkle with more salt if liked. Serve hot.
