    About this recipe: This is a very healthy soup with a great taste, too! Don't forget to let lentils and garlic soak in water overnight. Nice and warming for a cold winter dinner.

    Ingredients
    Serves: 4 

    • 300g lentils
    • 1 clove garlic
    • drizzle of olive oil
    • 2 small potatoes, peeled and cubed
    • 1 carrot, chopped
    • 1 stick celery, chopped
    • 1 onion, chopped
    • 1 bay leaf
    • 1 pinch ground cumin
    • 1 pinch salt
    • 1L vegetable stock

    Method

    1. Soak lentils in cold water with garlic overnight.
    2. In a large pot, heat oil over medium heat, add the garlic that soaked in water with lentils. Add the vegetables, drained lentils, bay leaf and cumin. Season with salt and stir.
    3. Add the stock. Cover and simmer for 1 1/2 hours, stirring occasionally.
