About this recipe:A lovely, easy sausage pasta sauce. Bigoli is a long thick pasta that perfectly combines with this sausage pasta sauce. If you can't find it, use spaghetti. Serve with Parmesan cheese if you like it!
450g bigoli pasta or spaghetti
1 tablespoon extra virgin olive oil
1 onion, finely chopped
2 pork sausages, casings removed
1/2 glass white wine
salt and pepper to taste
1 teaspoon dried red chilli flakes

Bring a large pot with lightly salted water to the boil. Add the bigoli and cook for 8 minutes.
In a frying pan, heat oil over medium heat. Add finely chopped onion.
Break the sausage into pieces and add it to the pan. Brown for a minute.
Add the wine and let it evaporate.
Add the passata. Season with salt, pepper and chilli flakes. Simmer till slightly reduced.
