A lovely, easy sausage pasta sauce. Bigoli is a long thick pasta that perfectly combines with this sausage pasta sauce. If you can't find it, use spaghetti. Serve with Parmesan cheese if you like it!

Ingredients
Serves: 6
450g bigoli pasta or spaghetti
1 tablespoon extra virgin olive oil
1 onion, finely chopped
2 pork sausages, casings removed
1/2 glass white wine
500g passata
salt and pepper to taste
1 teaspoon dried red chilli flakes

Bring a large pot with lightly salted water to the boil. Add the bigoli and cook for 8 minutes.
In a frying pan, heat oil over medium heat. Add finely chopped onion.
Break the sausage into pieces and add it to the pan. Brown for a minute.
Add the wine and let it evaporate.
Add the passata. Season with salt, pepper and chilli flakes. Simmer till slightly reduced.
