Chocolate and biscuit log

    This used to be my favourite dessert as a teenager! This no-bake treat is easy and fun to prepare. Great afternoon snack to prepare when your children's friends are over or excellent after dinner treat!

    Serves: 6 

    • 200g butter
    • 100g sugar
    • 2 eggs
    • 1 shot rum
    • 200g dark chocolate, melted
    • 400g plain biscuits, such as Marie or Nice, crushed
    • whipped cream to serve

    1. In a large bowl, mix the butter with the sugar and the eggs. Add the rum and the melted chocolate. Stir well. Stir in the biscuit crumbs.
    2. Spoon the mixture onto a sheet of parchment. Roll over the parchment until the mixture is formed into a cylinder, like a sausage. Place it in the refrigerator for 2 hours.
    3. Slice it and garnish it with whipped cream. Serve.
