Courgette carpaccio

    This is a raw vegan courgette starter with tomatoes, basil and a lemon balsamic vinegar dressing. Choose a courgette that is maximum medium size, larger courgette are not as tender and have lots of seeds.

    Serves: 4 

    • 1 medium courgette
    • 1 tomato
    • fresh basil
    • For the dressing
    • 4 tablespoons olive oil
    • 1 tablespoon balsamic vinegar
    • 1 tablespoon apple cider vinegar
    • some dijon mustard
    • some lemon zest

    1. Finely slice courgettes lengthwise with a veg peeler and arrange on a serving platter. Dice tomato. Mince basil.
    2. In a cup whisk together all ingredients for the dressing and drizzle over the courgette. Scatter diced tomato and basil on top and let marinate for about 30 minutes.
