This is a raw vegan courgette starter with tomatoes, basil and a lemon balsamic vinegar dressing. Choose a courgette that is maximum medium size, larger courgette are not as tender and have lots of seeds.

1 medium courgette
For the dressing
4 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon apple cider vinegar
some dijon mustard
some lemon zest

Finely slice courgettes lengthwise with a veg peeler and arrange on a serving platter. Dice tomato. Mince basil.
In a cup whisk together all ingredients for the dressing and drizzle over the courgette. Scatter diced tomato and basil on top and let marinate for about 30 minutes.
