    Tzimmes (also spelled tsimmes) is a Jewish dish with sweet carrots and dried fruit, that is traditionally enjoyed as part of the Rosh Hashanah meal.

    Serves: 4 

    • 6 carrots, sliced
    • 150g prunes, chopped
    • zest of 1 orange
    • 350ml orange juice
    • 30g honey
    • 3 tablespoons unsalted butter
    • lemon zest to taste
    • ground ginger to taste

    1. In a saucepan combine carrots, prunes and orange peel, cover with orange juice and bring to the boil. Simmer for 10 minutes.
    2. Stir in honey and butter and simmer for another 60 minutes, until the liquid has evaporated. Sprinkle with lemon zest and ginger and simmer for another 5 minutes.
