Cabbage in cream sauce

    A delicious side dish with cabbage and apple. With the tasty cream sauce, it won't be hard to get your family to eat their veggies.

    Serves: 2 

    • 4 tablespoons olive oil
    • 1 onion, minced
    • 1 large apple, cored, peeled and diced
    • 1/2 head white cabbage, shredded
    • 250ml vegetable stock
    • 2 tablespoons dry white wine
    • 1 pinch nutmeg
    • 1 pinch caraway seeds
    • 1 bay leaf
    • 5 juniper berries
    • 200ml single cream
    • salt and pepper to taste

    1. In a large skillet heat olive oil. Fry onion and apple until translucent. Add cabbage and fry for about 5 minutes. Pour in stock and wine.
    2. Tie spices together in a piece of cheesecloth and add to the cabbage. Simmer for 40 minutes, until cabbage is soft.
    3. Take out spice bag, pour in cream, bring to the boil and season with salt and pepper to taste.
