Glace cherry and walnut biscuits

    These biscuits are simply delicious. A light shortbread-like biscuit with a glace cherry centre is rolled in crushed walnuts before being baked to perfection. Their unique and fruity flavour will delight your senses. Great to serve with a cup of tea or coffee...but they are also an excellent after dinner treat.

    Serves: 6 

    • 50g icing sugar
    • 120g butter
    • 1 eggs, separated
    • 1 1 lemon, juiced and zested
    • zest of 1 orange
    • 230g plain flour
    • 1 pinch salt
    • 100g crushed walnuts
    • 10 glace cherries

    1. In a large bowl, mix the sugar with the butter. Add the yolk and beat well.
    2. Add the citrus zest and the lemon juice. Keep stirring. Stir in the flour and salt. Cover the mixture and put it in the fridge.
    3. Pre-heat the oven at 160 C / Gas 3.
    4. In one bowl, beat the egg white. In another bowl, put the walnuts.
    5. Make little balls out of the mixture and put 1 cherry inside each. Dip the balls in the egg white first, then in the nuts. Place them on a baking tray lined with parchment.
    6. Bake for 20 minutes. Let them cool before serving.
