500g boneless skinless chicken breast halves
salt and pepper, to taste
100g plain flour
2 eggs, lightly beaten
200g dried breadcrumbs
butter, as needed for cooking
oil, as needed for cooking

Cut chicken breast in about 2cm thick strips and sprinkle with salt and pepper to taste.
Place flour on a plate, eggs on a second and breadcrumbs on a third plate.
Heat enough butter and oil to generously cover the bottom of a large frying pan and bring to a medium heat. Dredge chicken strips in flour, shake off excess, dip into the egg and coat with breadcrumbs. Fry in batches for about 5 minutes on each side, until golden brown.
Transfer to a plate lined with kitchen paper to soak up any excess oil. Serve hot.
