Cut chicken breast in about 2cm thick stripes and sprinkle with salt and pepper to taste.
Place flour on a plate, eggs on a second and breadcrumbs on a third plate.
Heat enough butter and oil to generously cover the bottom of a large frying pan and bring to a medium heat. Dredge chicken strips in flour, shake off excess, dip into the egg and coat with breadcrumbs. Fry in batches for about 5 minutes on each side, until golden brown.
Transfer to a plate lined with kitchen paper to soak up any excess grease. Serve hot.
