Crispy chicken nuggets

    My kids love chicken nuggets and I like to make them from scratch. That way, I know what's in them.

    Serves: 4 

    • 500g boneless skinless chicken breast halves
    • salt and pepper, to taste
    • 100g plain flour
    • 2 eggs, lightly beaten
    • 200g dried breadcrumbs
    • butter, as needed for cooking
    • oil, as needed for cooking

    1. Cut chicken breast in about 2cm thick strips and sprinkle with salt and pepper to taste.
    2. Place flour on a plate, eggs on a second and breadcrumbs on a third plate.
    3. Heat enough butter and oil to generously cover the bottom of a large frying pan and bring to a medium heat. Dredge chicken strips in flour, shake off excess, dip into the egg and coat with breadcrumbs. Fry in batches for about 5 minutes on each side, until golden brown.
    4. Transfer to a plate lined with kitchen paper to soak up any excess oil. Serve hot.
