About this recipe: This is a quick and tasty loaf cake to make for anyone who loves the flavour of hazelnuts.


Makes: 1 loaf cake

  • 375g ground hazelnuts
  • 375g caster sugar
  • 375g semolina
  • 1 ½ teaspoons baking powder
  • 500ml milk
  • a few drops of almond extract

  1. Preheat oven to 170 C / Gas 3. Grease or line a 1lb loaf tin.
  2. In a mixing bowl, combine nuts, caster sugar, semolina and baking powder. Mix well and stir in cold milk and almond extract.
  3. Pour mixture in greased loaf pan and bake in preheated oven for 75-80 minutes, or until a skewer inserted in the centre of the cake comes out clean.
